Lakan Lambanog Aged Coconut Spirit — Quezon

Quezon Province — Lambanog, Philippines
Artisanal aged lambanog from the Quezon Province of Luzon, Philippines, produced from the fermented sap of coconut palm flowers collected in traditional clay pots by skilled mananggiti (coconut tappers). Lakan's aged expression rests in toasted local hardwood barrels for 6–12 months, developing coconut cream, vanilla, and tropical fruit character with a clean, smooth finish unusual for traditional lambanog. Unlike industrial lambanog (often flavoured with fruit concentrates), Lakan's spirit expresses the natural character of Quezon's coconut palms and the skill of traditional fermentation and distillation methods.
