Marjan Simčič Opoka Rebula Goriška Brda PDO

Brda Wine Region, Slovenia
Slovenia's finest white wine — 100% Rebula from the Opoka (ponca) single-vineyard parcel. The ponca soil gives an extraordinary layered mineral quality: chalk, struck flint, white peach stone, and bitter almond. Fermented in large oak casks with indigenous yeast, 12 months on lees. Taut, mineral, and remarkably long-lived. At its best at 7–15 years, developing honeyed complexity without losing its mineral spine.
complement
Opoka Rebula's mineral weight and citrus-bitter complexity is the ideal match for roasted flat fish; the sea-mineral-salt amplifies the wine's saline quality.

complement
Regional affinity — Slovenian aged alpine cheese with local wine; Rebula's mineral freshness cuts through the cheese's fat; honey bridges the wine's bitter-almond character.
