Michel Lafarge Volnay Premier Cru Clos des Chênes

Volnay AOC, France
Lafarge's greatest wine — the Clos des Chênes vineyard on the upper Volnay slope produces Pinot Noir of impressive structure and aromatic complexity. Whole-cluster fermented (30%), aged 18 months in old French barriques. Transparent ruby; red cherry, iron, dried rose, cedar, and a limestone-mineral backbone with more structure than typical Volnay. Needs 10 years; magnificent for 25+.
complement
Lafarge's structure and red cherry depth bridges duck's richness; the bitter orange of bigarade echoes the wine's own orange-peel note; bitter chicory contrasts with the wine's delicate fruit sweetness.

complement
The wine's iron mineral and cherry complexity aligns with venison's gamey depth; the blackberry jus creates a fruit mirror; celeriac remoulade's nuttiness grounds the pairing.
