Ossian Verdejo Rueda DO

Rueda DO, Spain
Spain's most historically significant Verdejo — from pre-phylloxera ungrafted vines (60–120 years old) on sandy soils at 860m altitude in Nieva. Whole-cluster pressed, indigenous yeast, fermented in concrete eggs and old oak; 12 months on lees. Profound complexity: bitter herbs, almond milk, lemon oil, old vine intensity, and a granitic mineral depth that recalls the landscape. Ageing potential of 15+ years. A piece of Spanish wine history.
complement
The wine's almond-bitter character is the natural companion to white asparagus; Iberico fat bridges the wine's mineral weight; this combination echoes the wine's own cultural and culinary landscape.

complement
Old-vine Verdejo's mineral depth and herbal complexity matches sea bass's clean, firm flesh; the salt-baking technique's mineral quality resonates with the wine's own granitic mineral character.
