Paolo Bea Sagrantino di Montefalco Pagliaro DOCG

Sagrantino di Montefalco DOCG, Italy
Paolo Bea is Sagrantino's natural wine conscience — producing wines with minimal intervention from ancient vines in the Pagliaro vineyard. Long maceration with indigenous yeasts and minimal sulphur produces Sagrantino of raw, untamed character: dark berry concentrate, dried fig, iron earth, and animal notes from extended skin contact. The tannins are vast and the wine demands patience — but rewards it with a complexity unlike any other Italian red.
complement
Bea's natural Sagrantino and Umbrian lamb with truffles — the terroir of the wine and the food overlap geographically; the wine's raw power is matched by the preparation's rustic depth

complement
Umbrian game bird preparations demand Sagrantino's tannic structure; the lard wrapping's richness is absorbed by the wine's formidable phenolics
