Philosophy
Each parcel vinified separately in stainless steel or old oak, with indigenous yeasts only. No sulfur added save minimal use at pressing. All bottles disgorged by hand à la volée without dosage, capturing pure terroir expression with restrained minerality and austere elegance.
Reputation
Jacques Lassaigne, Emmanuel's father, began planting vines in Montgueux in 1964 atop a chalk hill abandoned since phylloxera decimated the village's vineyards in the late 19th century. The terroir—called the Montrachet of Champagne for its mineral purity—was little known until Emmanuel assumed stewardship in 1999, transforming his father's modest supply operation into Champagne's most revelatory grower estate.
