Hand-harvested fruit with native DAOU Mountain yeast (strain D20) fermentation; extended cold-soak prior to primary fermentation; minimal sulfite use; extended barrel aging in predominantly new French oak including rare bois rosé selections; continuous phenolic management throughout vineyard and cellar.
Reputation
Founded in 2007 by Lebanese-born brothers Georges and Daniel Daou, the estate crowns DAOU Mountain at 2,200 feet elevation within the Adelaida District of Paso Robles. The brothers acquired land once farmed by Dr. Stanley Hoffman and enologist André Tchelistcheff in the 1960s, restoring the historic redwood winery and directing its terroir of rare calcareous clay—identical to Saint-Émilion soils—toward world-class Bordeaux varieties.
