From modest agrarian roots near Chablis, Sébastien Christophe revived his family's mixed farm in 1999 at age 23 with just 0.6 hectares of vines. Operating from Ferme des Carrières on the Fyé plateau, he has methodically assembled holdings across Chablis's most coveted right-bank sites, applying early-learned organic protocols that preceded formal certification.
