The Defaix family cultivated vine at Château de Faix near Avallon from the sixteenth century; Etienne-Paul Defaix established them as vignerons in Chablis during the eighteenth century. Daniel-Étienne, the 14th generation, inherited the estate at 23 in 1978, purchasing the renowned vineyard Le Lys, and returned to the grandfatherly practice of extended lees-aging—a philosophy he alone in contemporary Chablis now maintains.
