Minimal intervention philosophy centered on terroir expression. Spontaneous fermentations with indigenous yeast; cellaring tailored by parcel—unoaked stainless steel for mineral-driven left-bank sites (Montmains), aged French oak for clay-inflected right-bank premier crus (Montée de Tonnerre). No new oak used; distinctive approach respects each climat's fundamental character.
Reputation
The Collet family's lineage in Chablis reaches back to 1792, yet the domaine proper was founded in 1952 by Jean Collet, son of winemaker Marius, who began with 61 ares of vines and first bottled under his name in 1954. His marriage to Janine Costal in 1952 brought precious parcels—Vaillons, Montmains, Mont de Milieu—whose inheritance shaped a modern estate now spanning both banks of the Serein.
