Philosophy
Giuseppe Quintarelli (1927-2012) was the most legendary figure in Valpolicella — the patriarch of Amarone. His estate in Cerè di Negrar produced wines of extraordinary complexity through the most traditional methods: the longest appassimento (3-5 months), aging in old Slavonian oak for up to 7 years, and no compromise. His Amarone Classico labels (some hand-dated by Quintarelli) are Italian wine legends. Son-in-law Francesco Dall'Omo and family continue.

Quintarelli Amarone is Italy's most mythologised wine — his hand-dated labels are collector items. The wines require 20+ years before peak.
