Sidonio de Sousa is the most traditional producer in Bairrada — producing old-school Baga of extraordinary tannic structure and aging potential from the appellation's heaviest clay soils. The wines are not for the impatient: 5-10 years is minimum to soften the ferocious tannin of young Baga from this estate. But at 15-20 years, Sidonio de Sousa's Bairrada reveals one of Portugal's most complex and distinctive red wine profiles: dark cherry, tobacco, cedar, leather, and an almost Barolo-like mineral precision from the clay.
