Chablis AOC

Chablis AOC is the northernmost appellation of Burgundy, producing Chardonnay of unique character from Kimmeridgian limestone — a marine deposit rich in ancient oyster fossils (Exogyra virgula) that impart a distinctive chalky, saline, almost oyster-shell mineral note found nowhere else in the wine world. The appellation encompasses four quality tiers: Petit Chablis, Chablis, Premier Cru (17 classified), and Grand Cru (7 classified). The 'unoaked' style — stainless steel fermentation and ageing — is traditional and preserves the region's razor-sharp acidity and minerality.
