Nicoise Salad

Salade Nicoise is a Nicard composition — from Nice, on the French Riviera, where the cuisine reflects Ligurian Italy as much as France. In the traditional version: ripe tomatoes, good olives (Nicoise variety), anchovies, tuna (canned in olive oil, not fresh-seared), hard-boiled eggs, and green beans. Nothing is cooked to order. Everything is at room temperature. The dressing is oil, vinegar, mustard, and garlic. No lettuce. No potato (controversial — the Nice traditionalists say no; the rest of France says yes).

The Method

Boil potatoes in salted water for 12 minutes until tender; drain and slice warm into 5mm rounds.

Blanch haricots verts in salted boiling water for 4 minutes until al dente; shock in ice water, drain thoroughly.

Soft-boil eggs for 6 minutes; cool in ice water, peel and halve.

Whisk together olive oil, red wine vinegar, Dijon mustard and minced garlic; season with salt and Tellicherry pepper.

Arrange salad leaves on large platter; distribute warm potatoes, haricots verts, tomatoes and sliced red onion across surface.

Arrange egg halves, tuna ventresca, anchovy fillets and capers in clusters atop greens.

Drizzle vinaigrette over entire salad; toss gently or serve family-style for individual assembly.

Sensory Tests

◇Where it lives or dies. The moment where Nicoise lives or dies is the arrangement — this is a composed salad, not a tossed salad. Each ingredient occupies its own territory on the plate and is dressed separately. The dressing goes on the green beans while warm. The tomatoes get Maldon only. The tuna is flaked over the top at the last moment. The anchovy fillets cross the surface in lines. Sliced eggs border the arrangement. Viewed from above, it should look like a painting.
