Description
Chicken long rice (already) in expanded detail: mung bean noodles (long rice) simmered in ginger-chicken broth. The ginger must be generous — an inch of ginger per cup of broth minimum. The chicken (thighs, bone-in, skin-on) simmers for an hour minimum to build a gelatinous broth. The noodles are added last and absorb the broth. This is Hawaiian soul food and a lūʻau essential.
