Dadar gulung (literally "rolled omelette/crepe") is one of the most refined of the everyday Indonesian sweet preparations — a thin, pandan-green crepe rolled around a filling of palm sugar and fresh coconut (serundeng manis or ungan). The pandan crepe requires technique: the batter must be thin enough to cook in seconds and form a delicate, pliable sheet, but not so thin it tears during rolling. The filling must be dry enough not to leak through the crepe but moist enough not to crumble. This is a preparation where the variables are few and the margin for error is narrow; the benchmark dadar gulung is perfect in every element.
