Origin

Es campur (mixed ice) and its close relatives constitute a category of Indonesian cold desserts that has no direct Western equivalent — layered combinations of shaved ice, coconut milk, palm sugar syrup, jelly, fruit, starchy components, and sweetened condensed milk, eaten with a spoon through the layers to produce different flavour combinations in each scoop. The category includes es campur (mixed, anything goes), es teler (documented in batches 1–11), es doger (Bandung-origin coconut milk ice), es cincau (grass jelly ice), and es buah (fruit ice). Each is distinct, but all share the layered architecture and the drinking-eating hybrid experience.
