Description
Palembang — the capital of South Sumatra, sitting on the Musi River — has a cuisine defined by RIVER FISH. The Musi and its tributaries provide patin (river catfish), belida (featherback fish — the fish used in pempek), and gabus (snakehead fish). Palembang cuisine is the FISH PROCESSING capital of Indonesia — pempek (INDO-PEMPEK-01), tekwan (fish dumpling soup), model (fish cake in curry), and laksan (fish noodle soup with coconut sauce) all originate here.
