Description
The Dayak people — the indigenous inhabitants of Borneo's interior — have a food tradition built on the RAINFOREST. Wongso notes that Kalimantan food is the most under-documented Indonesian regional cuisine — few cookbooks, few restaurant representations, few food writers. The cuisine relies on foraged ingredients: rattan shoots, wild ferns (pakis), river fish, wild boar, and local vegetables that have no English names.
