Vegan Ramen (Shio-Style — Mushroom Broth)

Vegan ramen at its highest level is not a compromise — it is a legitimate tradition within ramen's evolution. Shio (salt) ramen, with its clear, delicate broth, is the most natural fit for a vegan interpretation: the light style allows the depth of a mushroom-kombu broth to show without the heaviness of a pork bone tonkotsu. The approach requires building complexity in layers: a primary broth of kombu, dried shiitake, dried scallop (omit for strict vegan), and charred leek and ginger; a tare (concentrated seasoning) of salt, kombu, and dried mushroom liquid; and an aroma oil of sesame and charred spring onion. The topping — roasted king oyster mushroom 'scallops', bamboo shoots, corn, a ramen egg or marinated tofu, and nori — completes a bowl that stands on its own merits.

The Method

Rehydrate dried shiitake and oyster mushrooms in 500ml boiling water for 15 minutes; strain, reserving liquid, and slice caps into 3mm strips.

Bring 2 litres water to boil with kombu and reserved mushroom liquid; simmer uncovered for 45 minutes until deeply umami-rich.

Strain broth through fine mesh; season with 60ml tamari, 30ml mirin, and kombu powder; taste and adjust salinity.

Blanch fresh ramen noodles in salted boiling water for 3 minutes; drain and divide between 4 bowls.

Sauté fresh shiitake and enoki in 15ml sesame oil over high heat for 2 minutes until golden; season with pinch Aleppo pepper.

Ladle 500ml hot broth into each bowl over noodles; top with sautéed mushrooms, spring onion, nori, remaining sesame oil drizzle, and Aleppo pepper.
