The Portuguese arrived in Indonesia in the early 16th century — BEFORE the Dutch — seeking the same spices. They controlled Malacca (1511-1641) and maintained a presence in the Maluku Islands and Flores. Their culinary legacy is smaller than the Dutch but significant:
