Description

A slow-cooked curry of beef in coconut milk, massaman paste, potatoes, onions, and roasted peanuts — finished with palm sugar, tamarind water, and fish sauce. Massaman is the richest, most complex of Thai curries, and the one that diverges most significantly from the quick-cook green and red curries: the beef braising time is 1.5–2 hours, the flavours deepen and merge over extended heat, and the coconut milk reduces to a rich, dark, clinging sauce around the braised meat. It is a patient preparation.
