Aguachile (Sinaloan raw shrimp in chile water)
Aguachile is Sinaloa's raw shrimp preparation — butterflied raw shrimp briefly marinated (2–5 minutes) in a vivid green or red liquid of blended fresh chiles, lime juice, and water. Unlike traditional ceviche, aguachile is barely cured — the shrimp is still almost raw, the colour barely changed. The sauce (agua de chile) is strained and poured over the shrimp at service. Served immediately on cucumber rounds with red onion and avocado. The heat level is high — this is not a mild dish.
