Hot Maize Porridge with Toasted Ground Squash Seeds

Sikil sa' (Maya: squash-seed water or drink) is one of the oldest beverages in the Yucatecan pantry — a warm, thickened maize atole enriched with finely toasted and ground Cucurbita maxima or C. moschata pepitas. The drink sits at the intersection of sustenance and ceremony: dense enough to carry fieldworkers through a morning, refined enough to appear at market stalls and household altars alike. Its character is earthy and faintly grassy, with the particular nuttiness that comes only from seeds toasted dry over a comal until they blister and pop. This is not a sweet drink by default; sweetness is a matter of household preference, and the base recipe stands entirely on grain and seed.

The recipe is being written into the canon.

Quality Hierarchy

01
RESERVE: Fresh nixtamalized masa from dried heirloom Yucatecan white maize, pepitas ground on a stone metate — yields the fullest grain flavour and a slightly textured, living character
02
EVERYDAY: Good-quality masa harina (such as Maseca or Bob's Red Mill white corn masa) with commercially hulled pepitas toasted at home — reliable and consistent
03
AVOID: Pre-ground pepita flour or roasted and salted seeds; salted seeds throw the seasoning entirely and pre-ground flour has lost volatile aromatics

Sensory Tests

◇Toasting done: seeds are uniformly golden-tan, skins blistered; the smell is nutty and warm, not green or raw — any hint of smoke means the heat is too high
◇Grind done: powder clumps under finger pressure, releasing a faint slick of oil — if it remains completely dry and free-flowing, the seeds were under-toasted
◇Porridge ready: the spoon drawn across the surface leaves a trail that holds for two seconds before closing; no white paste visible at the spoon's edge; flavour is round and cooked-grain, not chalky
