Bacalhau à Brás (Christmas Eve — Portuguese Tradition)

In Portugal, Christmas Eve (Consoada) is the most important meal of the Christmas celebration, and bacalhau — salt cod — is the essential ingredient. Bacalhau à Brás is perhaps the most beloved of Portugal's 365 documented bacalhau preparations: shredded salt cod mixed with fried potato straws and onion, bound with lightly scrambled eggs and garnished with olives and parsley. The preparation is fast (once the salt cod has been properly desalted), deeply savoury, and produces a texturally complex dish — the crisp potato, the yielding cod, and the barely-set egg create three distinct textures that meld in the eating. The salt cod's desalting is the preparation's most time-consuming element and the most critical: 48 hours minimum in cold water, changed three times daily, is required to reduce the salt to the correct level — still salty, but not inedibly so.

The Method

Drain soaked cod thoroughly, pat dry with paper towels, and shred finely by hand, removing all bones and skin; set aside.

Preheat oven to 160°C; heat 100ml oil in large shallow pan over medium-high heat, add potatoes in single layer, and fry until golden and crisp, approximately 8 minutes per side; drain on paper towels and season with fleur de sel.

In same pan, add remaining oil and onion rings with bay leaf; cook over medium heat until deeply caramelised and soft, 12–15 minutes, stirring occasionally; season with salt and pepper.

Return fried potatoes to pan with caramelised onions and shredded cod; toss gently to combine and heat through, 2 minutes.

Pour beaten eggs over mixture and stir gently with wooden spoon over medium-low heat until eggs coat and set slightly, 3–4 minutes; do not fully scramble.

Remove from heat; fold in olives and parsley carefully to avoid breaking potatoes.

Transfer to warmed serving platter; season to taste with additional salt and pepper, and serve immediately with lemon wedges on the side.

Sensory Tests

◇Sight. Potato straws yield slightly when egg binds them — still audibly crisp, not soft. Three textures distinct on the tongue: crisp potato, yielding cod, barely-set egg.
◇Where it lives or dies. Insufficient desalting produces an inedibly salty dish. Soft potato straws destroy the textural contrast that defines the dish. Over-scrambled eggs make it dry and dense.
