Brazo de Reina (Chaya, Squash-Seed, and Egg Tamal Log)

Brazo de reina — 'arm of the queen' — is a single large rolled tamal, not a plate of individual pieces. The masa is spread across banana leaves, layered with ground toasted squash seeds, blanched chaya leaves, and sliced hard-boiled eggs, then rolled into a tight log and steamed until set. At the table it is sliced crosswise and dressed with the same two-sauce treatment as papadzules: a pepita-epazote sauce over the top, a roasted tomato sauce alongside. It is one of the oldest vegetarian preparations in the Yucatecan canon, drawing directly on pre-contact pantry staples — chaya, squash seeds, maize — with the egg the only post-Columbian addition of note. The dish demands precision in the roll: too loose and it collapses on the cut, too tight and the masa cracks.

The recipe is being written into the canon.

Quality Hierarchy

01
RESERVE: Fresh stone-ground masa from a local molino, same-day ground squash seeds, garden chaya still warm from blanching
02
STANDARD: Masa harina reconstituted with warm stock, commercially toasted pepitas ground to order, fresh-frozen chaya
03
ACCEPTABLE: Masa harina reconstituted with water; bagged pre-ground pepitas; Swiss chard substituted for chaya, blanched with epazote to compensate

Sensory Tests

◇Float test on the masa: a pea-sized ball must bob in cold water; dense masa produces a gummy, leaden log
◇Pepita sauce colour: should be pale celadon-green with visible epazote flecks; if it turns grey, the seeds were over-toasted
◇Tomato sauce surface: rendered fat pooling at the edges tells you the water has cooked out and the sauce will not make the masa soggy
◇Done test on the log: unwrap one end — masa should come away cleanly from the leaf, surface matte not shiny, and spring back when pressed
