Brining

Brining is a pre-treatment step where meat is submerged in a seasoned salt-water solution before marinating or cooking. In Yucatecan practice, it serves a specific structural purpose: the salt penetrates muscle fibres, increasing their capacity to retain moisture through the intense dry heat of the p'íib or its stovetop equivalent. Sterling introduced it as a modernising move in recipes like Cochinita pibil and Pavo en relleno negro precisely because the cooking environments involved — sealed, smoky, high-radiant-heat — can drive moisture out of lean or large cuts faster than the meat can recover. The result is a finished dish that stays juicy at the table rather than fibrous on the plate. It is a technique borrowed from professional kitchen practice and applied here to a Yucatecan context; it is not traditional to the peninsula.

The recipe is being written into the canon.

Quality Hierarchy

01
ESSENTIAL — Sea salt, not iodised table salt. Iodised salt can discolour the meat and introduce a metallic edge.
02
PREFERRED — Bone-in, skin-on cuts. Skin and bone act as a buffer against moisture loss during high-heat cooking. A skinless, boneless pork loin will still benefit from brining but requires a shorter window.
03
ACCEPTABLE — Kosher salt at equivalent weight. Diamond Crystal and Morton have different densities; weigh, do not substitute by volume.

Sensory Tests

◇After brining, the surface of the meat should look slightly paler and feel firmer to the press than raw — the salt has already begun tightening the proteins.
◇After rinsing and drying, the meat should smell clean and faintly saline, not ammoniated. Any off-smell means the brine was too warm or the meat was already compromised.
◇When sliced after cooking, a properly brined cut shows moisture beading on the cut face rather than running off immediately onto the board.
