Burnt-Sugar Caramel
A dry-method caramel taken deliberately past golden amber into deep mahogany, where controlled bitterness becomes the point rather than the accident. The technique appears across Yucatecan sweets and ice creams, functioning as both a flavouring base and a glaze. Sugar is cooked without water until it liquefies and darkens, then arrested with cream or another fat to produce a sauce with a pronounced bitter-sweet edge and none of the cloying flatness of a pale caramel. Getting there requires nerve: the window between mahogany and carbon is measured in seconds at high heat.
The recipe is being written into the canon.

Quality Hierarchy
01
RESERVE: White refined cane sugar — the purity prevents off-flavours at high temperature. Piloncillo (raw cone sugar) can substitute but introduces molasses notes and a lower smoke point; adjust heat accordingly.
02
STANDARD: Heavy cream with a minimum 35% fat content. Lower-fat cream breaks the emulsion and produces a thin, greasy sauce.
03
AVOID: Any pan with a dark interior coating — you cannot read the colour of the caramel accurately and will overshoot the target.
II
Sensory Tests
◇Colour at pull: the caramel should be the colour of an aged rum — deep amber-brown with reddish undertones. Hold the pan at an angle against a white surface to check.
◇Smell at pull: sharp, bittersweet, with a faint smoky top note. Any smell of true burning or bitterness that coats the back of the throat means the batch is lost.
◇Texture after butter incorporation: the finished sauce should coat the back of a spoon cleanly and fall in a slow, unbroken ribbon at room temperature. If it threads, the heat was too high during the final cook-down.
