Chaw Popox (Cacao Atole with Foam)
A ceremonial cacao drink from San Mateo del Mar, Oaxaca, prepared by the Huave (Ikoots) people of the Tehuantepec isthmus. Toasted cacao beans are ground on a metate with cinnamon and the woody stem of the ncheed plant — a local foaming agent — until a smooth paste forms. That paste is then beaten vigorously with water to raise a dense, cold foam that is lifted off the surface and floated over hot atole in the bowl. The technique is ancient: foam, not heat, is the finished product, and the two temperatures meet only at the moment of serving.
