Chayotes al Vapor (Steamed Chayotes)
A quick, bright vegetable dish from the Sierra de Puebla region, where the mild, slightly starchy flesh of fresh chayote (Sechium edule) is julienned and cooked in its own steam with serrano chiles and cilantro. The technique — a brief high-heat toss followed by covered medium-heat cooking — keeps the strips crisp at the core while the lard or oil carries the heat of the serranos through every piece. Cilantro goes in near the end, maintaining its green lift rather than wilting into the background.
