Chilaquiles de Tequila — Jalisco
A regional Jaliscan preparation of chilaquiles built around the dried heat of chilacate chiles — large, brick-red pods closely related to dried Anaheim or New Mexican varieties — rather than the tomato- or tomatillo-based sauces common elsewhere in Mexico. Tortilla pieces are fried until just golden, then finished in a concentrated chile broth until the sauce clings and the edges soften without collapsing. The dish takes its name from the town of Tequila in Jalisco, and it is a practical, honest breakfast or brunch built from pantry staples. The final scatter of sharp crumbled cheese and raw white onion cuts the richness of the lard and the earthiness of the dried chiles.
