Chilaquiles Michoacanos

A Michoacán household dish that moves quickly from pan to table. Crisp-fried tortilla squares meet a bright, textured tomatillo-serrano sauce, then loose eggs are folded in until just set and curdy. A spoonful of crème fraîche rounds everything at the finish. The result is rustic, bracingly tart, and deeply satisfying — a dish that punishes hesitation and rewards a hot pan.

Sensory Tests

◇Press a fried tortilla square between your fingers before it enters the sauce — it should snap cleanly and resist, not bend. If it bends, it is either too fresh or under-fried and will turn to paste the moment the sauce touches it.
◇Tilt the pan thirty seconds after the eggs go in: the edges should be just beginning to set while the centre remains visibly liquid and glossy. That is the moment to fold and pull off the heat. If the surface looks uniformly matte, the eggs are already past their window.
◇Taste the salsa before it hits the pan: it should be sharp enough to make you blink slightly. The frying and the eggs will blunt its edge considerably, so a sauce that tastes balanced at this stage will taste flat in the finished dish.
◇Where it lives or dies. The dish lives or dies in the fifteen seconds between adding the eggs and pulling the pan from the heat — too soon and the eggs are raw slick, too late and they seize into rubber that no amount of cream can rescue. Everything else in the recipe is preparation for that single, irreversible decision.
