Ciruelas en Dulce (Candied Native Plums from Cuicatlán)
A traditional Oaxacan confection from the Cuicatlán region, where small native plums are slowly transformed in a cinnamon-scented sugar syrup over several hours, then finished under the open sun for two days. The result sits somewhere between a candied fruit and a dried sweet — concentrated, deeply flavored, and shelf-stable for up to a year. This is pantry-building as it has been practiced in the Sierra Mazateca foothills for generations: patient, ingredient-led, and wholly dependent on fruit at the right moment of maturity.
