The Method

Finely shred the cabbage and grate the carrot. Toss with salt and set aside for 15 minutes. Excess water will draw out of the vegetables; squeeze firmly and discard the liquid. The cabbage should feel noticeably drier and slightly limp.

For the creamy tradition: whisk together the mayonnaise, white wine vinegar, and sugar until the sugar dissolves and the dressing is uniformly smooth. For the vinegar-based tradition: whisk together the cider vinegar, neutral oil, and sugar in the same manner. This is where the dish lives or dies — the acid level must be sharp enough to cut through the fat it will accompany; taste the dressing alone and adjust until it is noticeably tart before the vegetables dilute it.

Combine the drained cabbage and carrot with the chosen dressing. Toss thoroughly until every strand is coated. Rest for at least 10 minutes before serving; the slaw should glisten and the cabbage soften fractionally further without losing all resistance.

Reserve — Dense, tight-headed heritage cabbage varieties; house-made mayonnaise from good-quality egg yolks; unpasteurised cider vinegar with full acidity.

Estate — Fresh market cabbage shredded to order; a reliable commercial mayonnaise with clean flavour; named cider or white wine vinegar.

Market — Supermarket green cabbage; standard commercial mayonnaise; distilled white vinegar.

House — Pre-shredded bagged slaw mix; any available mayonnaise or vinegar; the structural role of the dish is preserved even at this level, provided the acid balance is maintained.

Sensory Tests
◇Touch. After salting, the cabbage yields noticeably under a squeeze and releases visible liquid — it is ready to drain.
◇Smell. The finished slaw carries a clean, sharp vinegar note above the mild green scent of raw cabbage.
◇Sight. Every strand is evenly coated; in the creamy version the dressing is opaque and clinging, in the vinegar version the slaw glistens without pooling.
◇Where it lives or dies. The acid in the dressing must be calibrated before the vegetables enter — once diluted by cabbage, it cannot be corrected without unbalancing the whole.
