Empanadas de Sola de Vega (Empanadas de Corpus Christi)
A laminated sweet pastry from Oaxaca, traditionally prepared for the Corpus Christi festival and sold at Sunday markets. The dough is built from all-purpose flour, egg yolks, and pork lard (manteca criolla), then rested overnight before being rolled thin, spread with additional lard, and coaxed into a tight roll for a second cold rest — a process that creates flaky, tender layers without any salt at all. Each slice of the chilled roll is pressed into a small circle, filled with custard (lechecilla), pineapple, or coconut, folded and sealed, then baked at 220°C / 425°F until crisp and golden. The recipe descends through multiple generations of bakers in the Barragán family of Oaxaca City.
