Forming and Filling Corn Husk Tamales
Corn husk–wrapped tamales are the exception in Yucatán, where banana leaf is the dominant wrapper. The Yucatecan original is Cháamchamitos (chaam-cha-MEE-tohs), filled with achiote-stewed chicken or pork and a ladle of k'óol (KOH-ol), the red masa-thickened sauce that defines the dish's body. Market stalls often sell corn husk tamales estilo mexicano — ground beef, different spices, no k'óol — that have nothing to do with this tradition; if you want Cháamchamitos, ask by name. The technique teaches the core Yucatecan tamal hand: a masa disc patted in the palm, folded to an empanada seal, then tied into a neat corn husk parcel. Mastering it unlocks the broader repertoire, from the pork variant called To'biholoch to the banana-leaf Vaporcitos that appear daily across the peninsula. Beyond the Yucatecan tradition, corn husk tamales across Mexico carry fillings that reflect regional pantries and habits. One straightforward filling documented by Diana Kennedy pairs chorizo with potato: crumble and peel roughly 2 oz (55 g) of fresh Mexican chorizo — the loose, red-stained pork sausage made from Suidae domesticus — from its casing and fry it in 1 tablespoon of lard over low heat until the fat renders and the meat is nearly crisped. Drain surplus fat if the chorizo is especially greasy. Add ¼ lb (about 115 g) of cooked, diced red bliss potatoes and fold them in, mashing roughly so potato absorbs chorizo fat and color. Raise heat slightly and cook a further 3 minutes until the mixture holds together. Season with sea salt. The result is a dense, savory pocket that works well inside a medium-weight masa spread on a softened dried corn husk: soak husks in hot water (about 70–80 °C / 158–176 °F) for 20–30 minutes until pliable before spreading. This filling has no claim to Yucatecan identity; it belongs to the broader central and northern Mexican corn husk tradition and is offered here as a contrast that sharpens understanding of what makes Cháamchamitos distinctive.
