Garnachas Istmeñas – The Chilito
A bright, ferment-adjacent relish from the Isthmus of Tehuantepec in Oaxaca, where it traditionally tops garnachas — small masa rounds fried crisp and piled with savory toppings. The chilito is the condiment that defines the whole affair: shredded cabbage and carrot ribbons tangled with torn Capsicum annuum pasilla oaxaqueño chiles, sliced jalapeños (Capsicum annuum), strips of raw garlic, and dried Oaxacan oregano (Lippia graveolens), all dressed in a pineapple vinegar that softens and draws the vegetables into a cohesive, deeply seasoned relish. It improves in the refrigerator over days, making it as practical as it is vivid.
