Guacamole Jerezano

A regional guacamole from Jerez, Zacatecas, in north-central Mexico, documented by Diana Kennedy in *My Mexico* (p. 136). Where the familiar guacamole of central Mexico relies almost entirely on ripe avocado, lime, and fresh chile, this Zacatecan version builds a layered green base from three distinct chiles — serrano, Anaheim (*Capsicum annuum*), and poblano (*Capsicum annuum*) — plus simmered tomatillo (*Physalis philadelphica*) and a finishing stir of crème fraîche or sour cream. The result sits somewhere between a salsa verde and a traditional guacamole: tarter, smokier from the charred large chiles, and noticeably creamier. It is served at room temperature as a condiment or table sauce rather than a dip in the contemporary restaurant sense.

The Method

1
Place tomatillos and serrano chiles in a small saucepan with just enough water to barely cover. Bring to a simmer and cook until tomatillos soften and turn dull olive, about 8 minutes. Do not drain.
2
Transfer tomatillos, serranos, and all cooking water to a blender. Blend until smooth.
3
Add the charred, peeled Anaheim and poblano chiles, salt, and half the cilantro. Pulse to a rough, uneven consistency — not a smooth purée.
4
In a bowl, crush the avocado pulp by hand or with a fork to a lumpy texture. Fold in the blended chile mixture, crème fraîche, onion, and remaining cilantro.
5
Taste and adjust salt. Serve at room temperature.

Sensory Tests

◇Press a spoon through the surface and observe the drag: the finished guacamole should hold a rough, slightly chunky body — it should not flow like a smooth purée nor sit as a stiff, dry mash. If it pours freely, the tomatillo liquid was over-incorporated; if it clumps without spreading, the avocado was underripe or the base was under-blended.
◇Taste a small spoonful on its own before adding crème fraîche: the blended chile-tomatillo base should register a clean, assertive tartness followed by layered heat — immediate prickle from serrano, then a slower, roasted warmth from poblano. If the tartness is flat or the heat arrives as a single undifferentiated burn, the three chiles were not treated separately or the tomatillos were not properly simmered.
◇After the crème fraîche is folded in, hold the bowl close and inhale: you should detect a faint char note underneath the green, herbal cilantro. If that smoky undertone is absent, the chiles were not charred on the comal or the comal temperature was too low.
◇Where it lives or dies. The dish lives or dies at the moment the blended tomatillo-chile base is folded into the crushed avocado: the base must be blended to a rough, not smooth, consistency and the avocado crushed by hand, not processed, so the two elements meet as textural equals rather than collapsing into a homogenous green paste. Add too much of the cooking liquid here and the avocado is overwhelmed; hold too much back and the tart, smoky character that separates this from any other guacamole never fully registers.
