Kkotgye-tang — Spicy Blue Crab Stew (꽃게탕)

Kkotgye-tang (꽃게탕) is one of Korea's great seafood stews: whole live blue crabs (꽃게, Portunus trituberculatus) halved and simmered in a fiercely spiced broth of gochugaru, gochujang, doenjang, garlic, and anchovy-dashima stock until the crab shells turn vivid orange and the broth absorbs the concentrated sweetness of the crab fat (게장). The technique requires starting with live crabs or the freshest possible dead crabs — the fatty crab roe (게란, 내장) inside the body is the flavour engine; stale crabs have lost it and the stew will be thin. Radish and tofu are added to balance the heat and absorb the spiced broth.

The Method

1
Combine the dried anchovies and dashima in 1.2 litres of cold water, starting cold so the stock draws a clean, full flavour from both solids before any heat can turn them bitter. Bring to a simmer over medium heat and hold for 15 minutes, then remove both solids and discard. The finished stock should be pale gold and smell cleanly of the sea.
2
Stir the gochugaru, gochujang, doenjang, and minced garlic into the hot stock, adding them now rather than later so each paste blooms into the broth and loses its raw edge before the crab goes in. Raise the heat to bring the seasoned broth to a full, rolling boil. Taste: the broth must be assertively spiced — the crab's sweetness will round it during cooking.

3
Add the radish pieces to the boiling seasoned broth and cook for 5 minutes, giving the radish a head start so it softens enough to drink in the spiced broth without turning slack by the time the crab is done. Cook until the radish begins to yield at the edges but retains its bite.
4
This is where the dish lives or dies. With the broth at a fierce boil, add the crab halves — cut face down — and the tofu, so the violent heat seizes the flesh at once and drives the fat and roe out of the scored body cavity and into the broth rather than away with escaping steam. Cook uncovered at a maintained boil for 7 to 8 minutes only, watching the broth: when it turns a deep, opaque orange-red — the fat and roe dispersing visibly through the liquid — the stew is ready. Do not exceed 8 minutes.
5
Remove from the heat. The shells should be uniformly vivid orange; the claw meat, checked by pressing the cracked shell, should feel just firm. Serve immediately in the pot or a deep clay vessel, with steamed rice alongside into which the broth is poured.

Quality Hierarchy

01
Reserve — Live female blue crabs (꽃게) in season — autumn or spring — carrying visible orange roe (게란) in the body cavity; sourced from Incheon or Taean coastal markets on the day of cooking. The roe-laden fat is the entire flavour engine of the stew.
02
Estate — Live male blue crabs purchased the same day, or very fresh dead crabs with intact, moist body cavities confirming that the fat has not drained. Premium gochugaru — coarsely ground, vivid red, from a single chilli variety — and artisan doenjang aged a minimum of one year.
03
Market — Fresh dead crabs chilled on ice (not on water), purchased and cooked within hours. Standard commercial gochugaru and gochujang of reliable colour and heat. Dashima and dried anchovies from a reputable Korean grocer.
04
House — Frozen crabs are inadmissible: the body fat drains on freezing and the broth will be thin. Frozen crab segments produce a competent spiced broth but not kkotgye-tang.

Sensory Tests

◇Smell. The anchovy-dashima stock smells clean and marine — no fishiness or bitterness — once the solids are removed after 15 minutes.
◇Sight. The broth turns a deep, opaque orange-red as the crab fat and roe disperse from the scored body cavity — the definitive signal that the stew is ready.
◇Sight. All crab shells have turned uniformly vivid orange, indicating the protein is fully cooked through.
◇Touch. The claw meat, probed through the cracked shell, feels just firm — not hard or springy, which would indicate overcooking.
◇Where it lives or dies. The dish lives or dies the moment the crabs enter the broth: it must be fiercely boiling and fully seasoned, and the cook must pull the pot at 7 to 8 minutes — the crab fat dissolved into a deep orange-red broth is the signal, overcooking beyond that point yields fibrous meat and a flat stew.
