Seafood in Herbed Garlic Sauce
Mariscos en verde al mojo de ajo is the coastal Yucatán kitchen's answer to the question of what to do when the catch is good and the garlic is plentiful. Mixed seafood — shrimp, fish fillet, and octopus in combination — is cooked fast in a sauce built from slow-roasted garlic, citrus juice, and fresh green herbs, most often epazote and flat-leaf parsley. The verde in the name is not a cooked green sauce in the pipián sense; it is the fresh, bright character that herbs and Seville orange juice give to rendered garlic fat. This is a port dish, quick by design, at its best within minutes of leaving the pan.
The recipe is being written into the canon.
