Mestizas — Grilled Pork and Pineapple Tacos with Cheese on Corn Tortillas
Mestizas are the corn-tortilla branch of Mérida's taquería trilogy — the same pastor-spiced, achiote-rubbed pork and caramelised pineapple that appear on tacos árabes (pita) and gringas (flour tortilla), but here grounded in a hand-pressed nixtamal tortilla. The name itself marks the cultural layering: the taco is mestiza in the literal sense, blending the Levantine shawarma technique that Lebanese immigrants brought to the Yucatán Peninsula in the late nineteenth and early twentieth centuries with the achiote and citrus vocabulary of Yucatecan cooking. Cheese — uncommon in traditional Yucatecan food — is the concession to taquería modernity, melted directly onto the tortilla on the comal. These are street-counter food, assembled to order, eaten standing.
The recipe is being written into the canon.
