Pavlova — the meringue dessert topped with whipped cream and fresh fruit — is the Christmas dessert of Australia and New Zealand, where Christmas falls in summer and the dessert tradition is built on fresh stonefruit (peach, nectarine, mango, passionfruit, kiwi) rather than the cooked spiced preparations of northern winter. The pavlova's claim to both New Zealand and Australian origin is a cultural battleground with no definitive resolution, but its role as Christmas centrepiece is uncontested: the white, cloud-like meringue base topped with whipped cream and summer fruit is a visual expression of the season in the Southern Hemisphere. The meringue is distinctive: unlike French meringue (dry, crisp throughout), pavlova has a crisp exterior with a marshmallow-like, soft interior — achieved through the addition of vinegar and cornstarch, which stabilise the egg proteins differently and prevent complete drying.

The Method

Preheat oven to 120°C; line large baking tray with parchment paper and lightly draw 23cm circle as guide.

Whisk egg whites in scrupulously clean bowl until soft peaks form, 2 minutes; add caster sugar in 5 additions over 3 minutes, whisking continuously until stiff, glossy peaks form and sugar is fully dissolved, 6 minutes total.

Fold in vinegar, cornstarch, and vanilla extract in three additions using rubber spatula until just combined, being careful not to overwork meringue.

Spread meringue onto prepared tray using offset spatula, building shallow well in centre by mounding edges slightly higher; bake 90 minutes until crisp outside and pale cream colour.

Turn off oven, crack door open, and allow pavlova to cool completely inside oven for 30 minutes; remove and cool fully on bench, approximately 10 minutes.

Whip heavy cream with icing sugar and vanilla extract to stiff peaks; pile into cooled meringue well just before serving.

Top generously with fresh berries or passion fruit; scatter chopped pistachios over surface.

Serve immediately as pavlova softens once filled; slice with hot knife between portions.

◇Where it lives or dies. Assemble only at service; cream and fruit weep into meringue within 30 minutes, collapsing the base from soft to soggy.
