Pimbos (Traditional Ring Cookies)
Pimbos are dense, subtly sweet ring-shaped cookies from San Blas and the Isthmus of Tehuantepec in Oaxaca. Built on toasted ground corn (not masa), bound with rendered marrow fat, and sweetened with panela or piloncillo, they belong to a category of indigenous Mexican baked goods that predate refined sugar and wheat flour traditions. The texture is firm and dry, closer to a biscuit meant to last than a tender crumb cookie meant to melt. Cinnamon is the sole spice. They are humble in appearance and deeply satisfying in the way that only very old, very honest food can be.
