Raita
Raita is yoghurt-based cooling condiment — full-fat yoghurt whisked smooth with cucumber, cumin, coriander, and mint. It is the structural counterpoint to spiced Indian mains, not a side dish. The yoghurt must be full-fat; the cucumber must be drained. Boondi raita (with puffed chickpea pearls) is the other great version. In either form, raita is the palate reset between bites of intense curry.

The Method

Whisk yogurt and milk until smooth and pourable.

Fold in squeezed cucumber, ginger, and green chilli gently.

Add ground cumin and chilli powder; stir to combine.

Season with salt and pepper; finish with lemon juice.

Fold in coriander and mint just before serving.

Chill until ready to serve alongside curries or rice dishes.

◇Where it lives or dies. The moment where raita lives or dies is the yoghurt base — whisk it aggressively before adding anything. The whisking incorporates air and breaks down any whey separation, creating a uniformly thick, creamy base. Add the drained cucumber and seasonings after the yoghurt is smooth. Taste immediately before service and adjust salt and cumin — the flavour diminishes slightly as it chills.
