Recado para Escabeche

Recado para escabeche is a dry-ground seasoning blend — a xa'ak' (Yucatec Maya: 'to mix up') — built around toasted Mexican oregano (Lippia graveolens), allspice (Pimenta dioica), and black pepper, with no binding vinegar. Unlike the paste recados that anchor cochinita or bistec, this one stays a powder, which means every gram of aromatic oil must come from the toasting step alone. It belongs to the criollo side of the Yucatecan pantry, carried into escabeche cookery — pickled poultry or fish dishes with Spanish colonial roots — where it seasons the braising liquid and perfumes the finished plate. Made in quantity and stored dry, it functions as the convenience foundation that market vendors have sold for generations, long before the commercial brick brands appeared on supermarket shelves. Without it, escabeche loses its backbone: that resinous, camphor-edged oregano heat that cuts through the vinegar.

The recipe is being written into the canon.

Quality Hierarchy

01
RESERVE: Mexican oregano (Lippia graveolens) foraged or grown in Yucatán and dried whole-branch, then stripped — deeper essential oil concentration than pre-stripped commercial leaf. Jamaican allspice for stronger, more intense berry.
02
STANDARD: Commercial dried Mexican oregano (Lippia graveolens) purchased whole-leaf, not pre-ground. Mexican-grown allspice (Pimenta dioica). All spices purchased whole and ground to order.
03
ACCEPTABLE: Whole spices sourced outside Mexico, ground to order. Avoid pre-ground oregano entirely — the volatile oils dissipate within weeks of grinding.

Sensory Tests

◇Toasted oregano: the leaf colour shifts from dusty grey-green to a deeper olive-brown; the aroma moves from grassy to resinous and sharp. Any hint of smoke means it is done — another 10 seconds and it is ruined.
◇Toasted whole spices: the allspice berries will begin to show a slight sheen as the surface oils are drawn out by heat; the aroma should be warm and camphor-edged, not harsh or acrid.
◇Finished powder: rub a pinch between your fingers — it should feel uniformly fine, not gritty, and the heat of your fingers should immediately release fragrance. If it smells flat, the spices were not toasted long enough.
