Recados / Xa'ak' / Seasoning Blends

Recados — called xa'ak' (seasoning blends) in Yucatec Maya — are the structural foundation of Yucatecan cooking, not condiments applied at the end. Each blend fixes the character of a dish before heat is applied: the specific spice ratios, the primary ingredient, and the form (paste or powder) are where the dish lives or dies. Two broad families exist: powdered recados, which are dry-ground and shelf-stable for months, and paste recados, which carry organics such as garlic and require refrigeration or freezing. The names are fluid — the same blend may be called recado blanco in Mérida and recado para bistec in Valladolid — and formulas shift by household and generation, making a working matrix of core versus optional ingredients the only reliable way to reconstruct canonical versions. Sterling's composite formulas, drawn from sources dating to the early nineteenth century and cross-referenced against market blends and working cooks, represent the most historically grounded published account of these blends available in English.

The recipe is being written into the canon.

Quality Hierarchy

01
RESERVE: Whole dried chiles sourced from a Yucatecan or Mexican specialty importer; bitter orange (Citrus × aurantium) squeezed fresh the day of use; hulled green squash seeds (Cucurbita argyrosperma, not C. pepo) from a Mexican grocery
02
STANDARD: Good-quality dried chiles from a Latin market; fresh lime-and-orange substitute for bitter orange (2:1 ratio); commercially hulled green pepitas verified by species
03
ACCEPTABLE: Pre-ground spice blends as a last resort only for the dry recados; fresh bitter orange impossible to replace in paste recados without flavour loss

Sensory Tests

◇Toasted pepita verde: seeds puff visibly and turn pale gold — any darker and bitterness sets in; the aroma shifts from raw and grassy to warm and nutty
◇Charred garlic (recado para bistec): the exterior skin is fully blackened and the clove yields completely when pressed — soft and jammy, not crunchy
◇Finished paste recados: no visible chunks when a small amount is smeared on white ceramic; colour is deep brick-red (pastor) or deep ochre-brown (bistec)
◇Dry recados after grinding: the powder passes through a medium-mesh strainer without visible coarse fragments; aroma is sharp and immediate when a pinch is rubbed between fingers
