Rolling and Steaming Large Log-Style Tamales

The log-style tamal — brazo de reina (arm of the queen) being the most prominent example — is a single, tightly rolled cylinder of masa and filling wrapped in chaya leaves and steamed to order. It is the architecture of the form that sets it apart: one long roll sliced at the table rather than individual packets assembled piece by piece. The technique demands a consistent masa thickness, a filling distributed in an even band, and a roll firm enough to hold its cross-section when sliced. Steam time and wrapper integrity are where the dish lives or dies.

The recipe is being written into the canon.

Quality Hierarchy

01
RESERVE: Masa ground from dried field corn (maíz criollo blanco) nixtamalised on-site; chaya harvested young and blanched same day; filling made from freshly toasted and ground pepita (Cucurbita argyrosperma), seasoned with fresh epazote
02
STANDARD: Good-quality masa harina rehydrated with warm water and enriched with lard; chaya from a reliable market source blanched to order
03
ACCEPTABLE: Prepared masa from a tortillería used within 4 hours of purchase; filling prepared a day ahead and refrigerated

Sensory Tests

◇Press the log at the 50-minute mark: the cylinder should feel uniformly firm with no soft depression at the centre — softness means undercooked masa
◇When sliced, the cut face should be smooth and cohesive, not crumbly or wet; a crumbly cut means overhydrated or undercooked masa
◇The chaya wrapper should peel cleanly from the masa without tearing the surface — if it sticks, the log needed another 5 minutes of steam
◇Smell the steam vent at 40 minutes: the scent should shift from raw corn to toasted, earthy masa — the tell that the surface layer has set
