Salsa Ranchera
A cooked table sauce from Central Mexico built on broiled tomatoes and chiles serranos, finished with a brief high-heat fry that concentrates the flavors and deepens the color. Diana Kennedy's version preserves the skins of both the tomatoes and chiles through the blend, which gives the finished sauce its characteristic rustic body and slight bitterness. This is not a fresh salsa — the frying step transforms it into something altogether more complex.
