Shandong Braised Pork Knuckle (Tian Ti Shao Zhu Shou)
Shandong tian ti shao zhu shou (tian ti = honeyed hoof) is a formal banquet dish: the whole pork trotter is slow-braised in soy, Shaoxing wine, rock sugar and five-spice until the skin becomes lacquered and gelatinous. Distinguished from Cantonese pig's trotters by the higher soy-sweetness ratio and the formal presentation on the bone at banquets.

The Method

Place the whole trotter in a pot, cover with cold water and bring to a full boil. Drain, rinse the trotter under cold running water and pat thoroughly dry. The surface must be dry before the next step, or the skin will not colour.

Dry-fry or deep-fry the trotter in a dry or lightly oiled wok or pot over high heat, turning regularly, until the skin is an even, deep golden brown on all sides. This creates the fond and lays the foundation for the final lacquer; pale skin at this stage means pale, shallow flavour throughout the braise.

Transfer the browned trotter to a heavy braising pot. Add the soy sauce, Shaoxing wine and enough water to just submerge the trotter. Add the rock sugar and five-spice powder. If using dried tofu knots, nestle them around the trotter now; they will absorb the braising liquid and provide textural variety.

Bring the liquid to a boil, then reduce to the lowest steady simmer. Cover and braise for 2 hours 30 minutes to 3 hours, turning the trotter once or twice during cooking. This is where the dish lives or dies: the braise must run long enough for the skin to become fully gelatinous — it should tremble and yield visibly when the pot is nudged, and a chopstick should meet no resistance passing through the thickest skin.

Remove the trotter carefully to a serving dish and keep warm. Raise the heat under the braising liquid and reduce, uncovered, until the sauce is thick and coats the back of a spoon with a deep, glossy sheen. Pour the reduced sauce over the trotter or serve it alongside. The sauce should be sweet, dark and lacquered — assertively so, in the Shandong manner.

Quality Hierarchy

Reserve — A free-range or heritage-breed trotter with dense, well-developed skin and substantial collagen; aged Shaoxing Huadiao wine of named provenance; large, pale amber rock sugar crystals. The reduction produces a sauce of exceptional body and depth.

Estate — A good-quality pork trotter from a reputable butcher; mid-grade Shaoxing rice wine sold in sealed bottles; whole-piece rock sugar. Reliable results across all formal occasions.

Market — Standard supermarket pork trotter, readily available; commercial Shaoxing cooking wine; pre-broken rock sugar. The dish is entirely workable; the sauce will be slightly thinner and the flavour less complex.

House — Any available pork trotter; pale dry sherry substituted for Shaoxing wine if unavailable; granulated sugar in place of rock sugar. The essential character — soy-sweet, gelatinous, braised — is preserved, though the lacquer will be less pronounced.

Sensory Tests
◇Sight. Skin is uniformly deep golden brown after browning, with no pale patches remaining.
◇Touch. After braising, the trotter trembles when the pot is nudged and a chopstick passes through the thickest skin without resistance.
◇Sight. The reduced braising sauce coats the back of a spoon in a thick, dark, glossy film.
◇Where it lives or dies. The trotter must braise for the full 2 hours 30 minutes to 3 hours; skin that has not reached full gelatinous collapse cannot be retrieved by any subsequent step.
