Toasted Squash-Seed and Spanish Plum Dip (Sikil Abal)

Sikil abal (Maya: sikil, squash seed; abal, Spanish plum) is the fruit-forward counterpart to sikil p'aak, swapping roasted tomatoes for Spanish plums — Spondias purpurea — which drive the dip toward a tart, tropical depth that tomato cannot replicate. The base is the same toasted, ground pepita de calabaza (Cucurbita pepo seeds), worked with habanero and enough liquid to reach a coarse, scoopable consistency. It belongs to the botanas tradition of Yucatán's markets and home kitchens: something substantial to set out with totopos while the rest of the meal comes together. The combination of rendered squash-seed fat and the bright acid of ripe Spanish plum is one of the peninsula's most direct expressions of pre-Columbian pantry logic.

The recipe is being written into the canon.

Quality Hierarchy

01
RESERVE: Fresh, ripe Spondias purpurea from a market with good turnover — deeply coloured skin, flesh that yields to thumb pressure, pronounced tangy-sweet scent at the stem end
02
STANDARD: Firm-ripe Spanish plums that need 1–2 days at room temperature; flavour will be sharper and less complex
03
ACCEPTABLE: Frozen Spondias purpurea pulp, thawed — acid character survives but some aromatic top notes are lost
04
AVOID: Tinned or preserved jocote; excessive sweetness and loss of acid balance will flatten the dip

Sensory Tests

◇Toasted seeds: pale gold, visibly puffed, smell of warm roasted nuts — no grey spots, no raw green scent
◇Ground seed paste: slightly oily to the touch when pressed between fingers, coarse rather than smooth, holds a peak briefly before relaxing
◇Finished dip: pale ochre-green with visible plum streaks; a spoon dragged across the surface leaves a clean channel that holds its shape for 3–4 seconds before the sides relax
◇Flavour check: forward tartness from the plum, immediate warmth from habanero, a long nutty finish — if the seed flavour is absent, the seeds were under-toasted
